Distilling a 100% Upstate New York corn base through a three-stage botanical process allows the Brooklyn distillery to layer heavy roots against delicate fresh produce without scorching volatile essential oils. Macerating cracked juniper, star anise, angelica, and Florentine iris directly in the pot provides a grounding, pine-and-earth structure, while fresh citrus peels, cucumber, and regional watermelon are introduced via vapor baskets in successive runs. Unlike traditional London Dry styles that center heavily on pine and resin, this approach yields a supple, lower-juniper profile anchored by bright fruit logic.
Aromas of cooling cucumber, mint, and watermelon rind open upfront, giving way to a rounded mid-palate driven by ripe grapefruit, green cardamom, and white pepper. In-house testing at USQ showed that the non-chill filtered oil content delivers an exceptionally creamy mouthfeel that holds its structure when cold-stirred. Our team recommends a crisp New World Gin & Tonic: build 2 oz Fort Hamilton New World Gin over ice, top with 4 oz dry tonic water, and garnish with a thin ribbon of fresh cucumber and a cracked black peppercorn.
